Stuffed Acorn SquashPrintable version of this recipe.Ingredients2 small acorn squash (cut in half, seeded) 4 teaspoons brown sugar (firmly packed) 3/4 pound ground beef (lean) 1 medium apple (cored, chopped) 3/4 teaspoon onion salt 1/2 teaspoon cinnamon 1/4 teaspoon curry powder
InstructionsPlace squash halves into ungreased 9-inch square microwave-safe baking dish, cut-side up. Place 1 teaspoon brown sugar into each squash half. Cover with plastic food wrap. Microwave on HIGH, turning once, until crisply tender (5 to 8 minutes).
Meanwhile, place ground beef in 10-inch skillet. Cook over medium-high heat, stirring occasionally, until browned (3 to 4 minutes). Add all remaining ingredients.
Continue cooking, stirring occasionally, until apple is softened (2 to 3 minutes). Drain off fat.
Uncover squash; spoon about 1 cup ground beef mixture into each squash half. Cover; microwave on HIGH, turning once, until squash is tender (7 to 8 minutes).
