Autumn Fruit Compote

4 medium apples
1 medium orange
1 medium lemon
1 cup raisins
1/2 cup figs (dried)
1 cup sugar
1 3-inch long cinnamon stick


About 5 hours before serving, or up to 4 days ahead:
Peel, core, and cut each apple into 16 wedges. Remove peel from orange and lemon in 1-inch wide strips. Squeeze juice from lemon to equal 2 Tbsp. (Refrigerate peeled orange for use another day)
In 4-quart saucepan over HIGH heat, heat apples, orange and lemon peels. Lemon juice mixed dried fruit, figs, sugar cinnamon stick, and 3 cups water to boiling. Reduce heat to LOW; cover and simmer 15-20 minutes until apples are tender.
Pour fruit mixture into bowl and refrigerate at least 4 hours to blend flavors.
