Curried Cauliflower and Broccoli

Ingredients

1 cup cauliflower florets
1 cup broccoli florets
2 leeks (white parts only, rinsed, thinly sliced)
2 tablespoons water
2 tablespoons olive oil
2 tablespoons orange curry powder
salt and pepper

Instructions

In a cold sauté pan, add in the water and olive oil and bring up the heat to medium-high. Adding the liquids to a cool pan will prevent them from splattering. Add in the leeks and sauté for 4 minutes stirring often.  Add in the broccoli and cauliflower and cover the pan with a tight fitting lid. Allow the vegetables to steam for another 5 to 8 minutes and then remove the lid. The broccoli and cauliflower should be slightly tender. Lastly, add in the curry powder and stir through to coat. Cook for an additional 2 minutes and remove from the heat. Season with salt and pepper to taste and serve warm.
