Indian-style Cauliflower and Potatoes (Aloo Gobhi)

1/4 cup vegetable oil
2 large cauliflower (cubed)
4 large potatoes (cubed)
1 teaspoon ginger (fresh, mashed)
1/2 teaspoon cumin seed
1/2 teaspoon turmeric
2 teaspoons coriander powder
1 teaspoon cumin powder
1 cup green peas


Heat oil in a large frying pan over medium high heat and fry the cumin seeds for about 2 minutes. When it turns brown, start mix in potatoes. Brown slightly, then add cauliflower. Add turmeric, 1/2 teaspoon salt, and the mashed ginger. Stir until liquid comes out of the cauliflower and potatoes. Add cumin and coriander powder. Lower to medium heat, cover and cook 25 to 30 minutes, stirring, but don’t overcook. Add peas after 10 minutes.
