Caramelized Peaches with Homemade Blueberry Sauce
Ingredients:
4 Peaches, halved and pitted1 cup fresh Blueberries
1/4 cup fine Sugar
1/4 cup Brown Sugar
¼ cup Water
Cooking Instructions:
Gently rinse the berries in cool water. Over medium-high heat, add the blueberries and water to a small sauce pot. Bring to a simmer and crush the berries with a wooden spoon. Allow to boil for 5 minutes and remove from the heat.In a shallow bowl or plate, combine the sugars. Take each of the peaches and rinse them in cool water. Cut the peaches in half and remove the pits. Pat the skins dry with a paper towel. Dip each of the peaches cut-side down into the sugar and set onto a plate. Allow the peaches to sit for 5 minutes so the juicy flesh can absorb some of the sugar. Meanwhile, bring your grill or a large sauté pan to medium high heat. Once the surface has reached its heat, place the peaches in the pan or on the grill sugar side down and allow to caramelize. This will take about 5 minutes.
